Make-Ahead Breakfast Casserole Recipes FAQs

Can you refrigerate a casserole before baking?

Yes, you can refrigerate most casseroles before baking. Simply assemble the casserole in the dish, then cover it tightly with storage wrap or aluminum foil. When you’re ready to bake it, take the casserole out of the fridge and let it sit at room temperature for 30 minutes. Putting a cold dish into a hot oven is not a good idea, as the dish can crack. During the last 10 minutes, preheat the oven.

How long can a breakfast casserole sit in the fridge before baking?

A well-covered breakfast casserole can sit in the fridge for eight hours before baking. Raw eggs are very perishable, so it’s best not to let them hang out uncooked for too long. Also, if there is bread in the casserole, you don’t want it to sit for too long or it may become soggy.

Why is my breakfast casserole soggy?

Your breakfast casserole might be soggy for a few reasons. The most common is if you used frozen ingredients. Frozen ingredients expel a lot of excess water during baking, so it’s best to thaw and drain them before use. Also, prepare any vegetables in the dish ahead of time. Vegetables hold on to a lot of water and should be cooked before going into the casserole to help draw out some of the water. Lastly, take the lid or wrapping off the casserole for the last 10 minutes of baking so excess liquid can evaporate and create a crunchy topping.
