Bow Tie Pasta Salad

This bow tie pasta salad combines delicious vegetables, herbs, cheese and salami and is topped with a tangy vinaigrette. 

Ingredients

  • 1 pound uncooked bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped red onion
  • 1/2 cup cubed salami
  • 1/3 cup cubed provolone cheese
  • 1/4 cup chopped sweet red pepper
  • 1/4 cup minced fresh parsley
  • 1 can (2-1/4 ounces) sliced ripe olives, drained
  • DRESSING:
  • 1/4 cup red wine vinegar
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup olive oil

Directions

  1. Cook pasta according to package directions; drain. Transfer to a large bowl; stir in tomatoes, onion, salami, provolone, red pepper, parsley and olives.
  2. In a small bowl, whisk together vinegar, Parmesan, mustard, garlic, oregano, salt and pepper. Slowly drizzle in olive oil; whisk until combined. Drizzle dressing over pasta mixture; toss to coat. Cover and refrigerate until chilled, 1-2 hours.
