Easy cannellini beans are inspired by their Italian roots for a protein- and flavor-rich side dish or meal.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 2 cans (13.4 ounces each) no-salt-added cannellini beans, rinsed and drained
- 1 cup unsalted chicken stock
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 fresh thyme sprigs
- 1 fresh rosemary sprig
- 1 teaspoon lemon juice
Directions
- Heat oil in a large saucepan to medium heat. Add onion; cook until soft, 4-5 minutes. Add garlic, cook one minute longer.
- Stir in cannellini beans, stock, salt, pepper, thyme and rosemary. Bring to a simmer; cover and cook 15-20 minutes, stirring occasionally. Discard thyme and rosemary. Stir in lemon juice.
