This cottage cheese ice cream is enriched with peanut butter and sweetened with a drizzle of honey, but it can be customized to fulfill all your healthy ice cream fantasies, whether that's fruity or studded with chocolate chips.
Ingredients
- 2 cups 4% cottage cheese
- 1/4 cup honey
- 2 tablespoons creamy peanut butter, optional
- 1-1/2 teaspoons vanilla extract
- Miniature semisweet chocolate chips or chopped fruit, optional
Directions
- Place cottage cheese, honey, peanut butter, if using, and vanilla extract in a food processor or high powered blender; puree until smooth and creamy. If desired, fold in chocolate chips or fruit.
- Transfer mixture to pint container or 9x5-in. loaf pan. Freeze until firm, 3-4 hours. Let stand at room temperature 15 before serving.
