
Cowboy Grilled Meat Loaf

I came up with this recipe after eating grilled meatloaf at a restaurant years ago. I loved the idea and developed a recipe that we like even more! Using indirect heat allows the centers to cook through before the outsides of the loaves get too dark. —Karin Gatewood, Dallas, Texas
Ingredients
- 1 large egg, lightly beaten
- 1 medium onion, finely chopped
- 3/4 cup Italian-style panko bread crumbs
- 1/2 cup finely chopped seeded jalapeno pepper or green pepper
- 1/2 cup ketchup
- 3 tablespoons Worcestershire sauce
- 1 pound lean ground beef (90% lean)
- 1/2 pound spicy bulk pork sausage
- GLAZE:
- 2/3 cup ketchup
- 2 tablespoons brown sugar
- 2 tablespoons spicy brown mustard
Directions
- In a large bowl, combine the first 6 ingredients. Add beef and sausage; mix lightly but thoroughly. Shape into two 6x4-in. loaves.
- Prepare grill for indirect heat. Grill loaves, covered, over indirect medium heat for 20 minutes. Meanwhile, in a small bowl, combine glaze ingredients.
- Brush top and sides of loaves with glaze. Grill until a thermometer reads 160°, another 10-15 minutes. Let stand for 10 minutes before slicing.
