Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup butter, melted
  • 2 large eggs, room temperature, beaten
  • 1 cup pork cracklings

Directions

  1. Preheat oven to 375°. In a small bowl, whisk together cornmeal, flour, sugar, baking powder and salt.
  2. In a separate bowl, whisk together buttermilk, melted butter and eggs. Add cornmeal mixture; stir until combined. Fold in pork cracklings. Transfer batter to a greased 9-in. square cake pan; bake 25-30 minutes or until cornbread is just set and a toothpick inserted into the center comes clean. Let slightly cool; slice.
