Cream of Celery Soup

Cozy, comforting cream of celery soup elevates the humble vegetable into something truly special.

Ingredients

  • 3 tablespoons butter
  • 1 pound celery ribs, chopped (about 3 cups)
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1-1/4 teaspoons salt
  • 1 teaspoon celery seed, crushed
  • 1/2 teaspoon pepper
  • 5 tablespoons all-purpose flour
  • 4 cups reduced-sodium chicken broth
  • 1/2 cup heavy whipping cream
  • 1 tablespoon sherry, optional

Directions

  1. In a Dutch oven, melt butter over medium heat. Add celery and onion; cook until celery is soft and slightly caramelized on the edges, 8-10 minutes. Stir in garlic, salt, celery seed and pepper; cook 1 minute longer. Stir in flour; cook until browned, 1-2 minutes, stirring constantly. Slowly whisk in chicken broth; bring to a simmer until thickened, 4-5 minutes, whisking frequently. Add cream and if desired, sherry; simmer another 4-5 minutes or until thickened.
