Crockpot Smothered Pork Chops

Simple smothered pork chops are the quintessential comfort food—and they're almost foolproof to make in the slow cooker.

Ingredients

  • 6 bone-in pork loin chops (7 ounces each)
  • 1 teaspoon kosher salt
  • 2 tablespoons canola oil
  • 3/4 cup beef broth
  • 1 can (10-1/2 ounces) condensed cream of mushroom soup, undiluted
  • 1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
  • 2 garlic cloves, minced
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1/2 pound sliced fresh mushrooms
  • 1 large onion, halved and sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Directions

  1. Sprinkle pork chops with salt on both sides. In a large skillet, heat oil over medium heat. Brown pork chops in batches. Transfer to a 7-qt. slow cooker. Add broth to skillet, stirring to loosen browned bits from pan. Whisk in soups, garlic, paprika and pepper; pour over chops. Top with mushrooms and onions. Cover and cook on low until meat is tender, 5-7 hours.
  2. Remove chops. Combine cornstarch and cold water until smooth; gradually stir into slow cooker. Return chops to slow cooker. Cover and cook on high for 30 minutes or until slightly thickened.
