Curry Chicken Salad Sandwiches

These creamy sandwiches are a step up from your usual chicken salad. The sweet, savory and spicy dish is made with mango chutney, honey and curry powder. —Francine Lizotte, Langley, British Columbia

Ingredients

  • 2 cooked chicken breasts, chopped
  • 2/3 cup mayonnaise
  • 2/3 cup Miracle Whip
  • 1/3 cup finely chopped celery
  • 1/3 cup finely chopped red onion
  • 1/3 cup finely chopped sweet red pepper
  • 4-1/2 teaspoons curry powder
  • 4-1/2 teaspoons mango chutney
  • 4-1/2 teaspoons honey
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 brioche hamburger buns, split
  • 8 Boston lettuce leaves

Directions

  1. In a large bowl, combine the first 12 ingredients. Cover and refrigerate at least 1 hour. Serve on buns with lettuce leaves.
