
Deep-Fried Deviled Eggs

Once you've tried deep-fried deviled eggs, you'll never want them any other way.
Ingredients
- 12 hard-boiled large eggs
- 1/4 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon minced chives
- 1/4 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1/8 teaspoon sugar
- 1 cup all-purpose flour
- 3 large eggs, beaten
- 1-1/2 cups Italian-style panko bread crumbs
- Oil for deep-fat frying
Directions
- Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in mayo, Dijon, chives, salt, pepper, and sugar. Spoon or pipe into egg whites. Level filling; cover and freeze eggs on a waxed paper-lined baking sheet until firm, about 30 minutes.
- In a shallow bowl, whisk eggs. Place flour and panko in separate shallow bowls. Dip eggs in flour to coat both sides; shake off excess. Dip in egg mixture, then in panko, patting to help coating adhere.
- In an electric skillet or deep fryer, heat oil to 350°. Fry eggs, a few at a time, until golden brown, 2-3 minutes. Drain on paper towels. If desired, garnish with additional minced chives.
