Ingredients
- 1 cup refrigerated unsweetened coconut milk
- 4 tablespoons chia seeds
- 3 tablespoons maple syrup
- 2 tablespoons baking cocoa
- 1/4 cup dairy-free semisweet chocolate chips
- 1/4 cup slivered almonds
Directions
- In a small bowl, mix coconut milk, chia seeds and maple syrup. Remove half the mixture to a small bowl; stir in cocoa until blended. Refrigerate both plain and chocolate mixtures, covered, until thickened, at least 6 hours.
- In each of 2 dessert dishes, layer a fourth of the white pudding, chocolate pudding, chocolate chips and almonds. Repeat layers. Serve immediately or store in the refrigerator, covered, up to 3 days.
