Gluten-Free Pizza Crust

Ingredients

  • 1 package (1/4 ounce) active dry yeast
  • 2 teaspoons sugar
  • 1 cup warm water (110° to 115°)
  • 3 cups gluten-free baking flour (with xanthan gum), plus more for rolling
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup olive oil
  • 1 large egg, room temperature
  • 1 teaspoon cider vinegar

Directions

  1. Preheat oven to 425°. In a small bowl, dissolve yeast and sugar in warm water. In a large bowl, combine flour, baking powder and salt. Mix in oil, egg, vinegar and yeast mixture. Beat on medium speed until smooth, dough will be sticky.
  2. Gently shape into a ball, place in a greased bowl, turning once to grease the top. Cover with a clean kitchen towel; let rise until doubled, about an hour.
  3. Grease a 14-in. pizza pan. Punch down dough; transfer to prepared pan and press to edges. Bake until lightly browned, 8-10 minutes.
  4. Top as desired; bake until toppings are heated through, 10-12 minutes longer.
