Egg burritos are a fusion between Mexican and American cooking styles. This recipe isn't quite as stuffed as a traditional burrito, so it's lighter on the stomach.

Egg burritos are a tasty, portable meal. This recipe rolls eggs, bacon and cheese into a flour tortilla, but you can have fun experimenting with all sorts of add-ons. What’s more, this egg and cheese burrito recipe freezes easily, so make a big batch and save the rest for a quick work-week breakfast or lunch option. Ingredients for Egg Burritos

  • Bacon: Taken from the belly of the pig, bacon is a fatty, rich cut of pork. Don’t toss out the leftover bacon grease! It’s a great cooking oil, among other things.
  • Eggs: If you haven’t learned how to make pillowy scrambled eggs, you may be pleasantly surprised by how easy it is.
  • Pepper: While you can use the preground stuff, freshly cracked black pepper is much more flavorful.
  • Tortillas: Flour tortillas are the traditional choice for wrapping burritos. Not only are they more popular in the north of Mexico, where burritos originate, but they’re also more pliable than corn tortillas.
  • Cheese: We love cheddar cheese for egg burritos since it’s super flavorful and great for melting. That said, you can use any melting cheese you love.
  • Green onion: Because green onions can be eaten raw, they’re ideal for chopping and tossing into recipes like these.

Directions

Step 1: Fry the bacon

In a large, heavy skillet, cook the bacon until crisp. Place the cooked bacon strips on paper towels, reserving about 1 to 2 tablespoons of bacon grease in the pan.

Step 2: Scramble the eggs

​​Whisk together the eggs, salt and pepper. Using the same bacon skillet over medium heat, pour in the egg mixture. Cook and stir the eggs until scrambled and no liquid egg remains. Remove the skillet from the heat.

Step 3: Assemble the burritos

Spoon about 1/4 cup scrambled eggs onto the center of each tortilla. Sprinkle with cheese, bacon and green onions. Roll the burritos and serve.

Egg Burrito Variations

  • Swap for the bacon: Using another meat will change the flavor of these egg burritos considerably. You may enjoy Mexican chorizo, breakfast sausage or steak tips.
  • Add some tasty extras: The best part about burrito recipes is that you don’t need to be too precious about it. Got leftovers?  Toss em’ in. How about hash browns, veggies or avocado? Those work too.

How to Store Egg Burritos

To store any leftovers, wrap the egg burritos in either reusable beeswax wraps or foil, place them in an airtight container and keep them in the fridge for up to three days. To reheat, we suggest placing them in the microwave or in the oven, using the convection setting.

To freeze this recipe, wrap each egg burrito in foil and place it in an airtight container. Stored like this, egg burritos can last in the freezer for up to three months. When about ready to enjoy, transfer them to the fridge to thaw overnight.

Other than eating them as soon as they’re made, the best way to prevent your burrito from getting soggy is to add the filling once it has cooled down a bit. Rolling piping hot ingredients into a flour tortilla causes it to steam and soften.

  • 12 bacon strips, chopped
  • 12 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 flour tortillas (8 inches), warmed
  • 1-1/2 cups shredded cheddar cheese
  • 4 green onions, thinly sliced

Directions

  1. In a large cast-iron or other heavy skillet, cook bacon until crisp; drain on paper towels. Remove all but 1-2 tablespoons drippings from pan.
  2. Whisk together eggs, salt and pepper. Heat skillet over medium heat; pour in egg mixture. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat.
  3. Spoon about 1/4 cup egg mixture onto center of each tortilla; sprinkle with cheese, bacon and green onions. Roll into burritos.
