Ginger Apple-Pear Crisp

Ingredients

  • 4 medium tart apples, peeled and sliced
  • 4 medium pears, peeled and sliced
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon grated fresh gingerroot
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • TOPPING:
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1/3 cup cold butter, cubed

Directions

  1. Preheat oven to 375°. In a large bowl, toss the first 7 ingredients. Transfer to a greased 2-1/2-qt. baking dish.
  2. In another bowl, mix the first 6 topping ingredients; cut in butter until crumbly. Sprinkle over fruit.
  3. Bake until golden brown and fruit is tender, 40-45 minutes. Serve warm.
