Meat Loaf Sandwich

This comforting meat loaf sandwich recipe is a great way to repurpose leftover meat loaf. With a fried egg and plenty of other tasty options for toppings, it might even be better than last night's dinner.

Ingredients

  • 2 tablespoons canola oil, divided
  • 2 slices leftover Matthew's Best Ever Meat Loaf
  • 2 onion buns, split
  • 2 large eggs
  • 1/2 cup fresh arugula
  • 2 slices red onion, separated into rings

Directions

  1. In a large nonstick skillet, heat 1 tablespoon oil over medium heat; add meat loaf slices. Cook until a thermometer inserted in center reads 165° and slices are crispy, 3-4 minutes on each side. Remove to bun bottoms.
  2. In the same skillet, heat remaining 1 tablespoon oil over medium-high heat. Break eggs, 1 at a time, into pan. Reduce heat to low. Cook until whites are set and yolks begin to thicken, turning once if desired.
  3. Top meat loaf slices with arugula, red onion and fried egg. Replace bun tops.
