These oven-fried chicken thighs are every bit as crispy as the deep-fried version, so put the deep fryer away and preheat the oven instead.
Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup panko bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons Italian seasoning
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 2 tablespoons seafood seasoning
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 6 bone-in, skin on chicken thighs (2-1/4 pounds)
- 2 large eggs
- 1 tablespoon 2% milk
Directions
- Preheat oven to 400°. Add butter and olive oil to 15x10x1-in. baking pan. Place in oven while preparing chicken.
- In a shallow bowl, mix bread crumbs, Parmesan cheese and Italian seasoning. In another shallow bowl, mix flour, cornstarch, seafood seasoning, garlic powder, salt and pepper. Whisk eggs and milk in a third shallow bowl. Dip chicken in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture, patting to help coating adhere.
- Mix melted butter and olive oil in pan. Add chicken, skin side down. Bake 30 minutes. Turn and bake until a thermometer reads 170°-175°, 25-30 minutes. Remove to paper towels to drain before serving.
