Ham and cabbage soup is a brothy, vegetable-rich soup that’s packed with chunks of juicy ham. This easy one-pot meal is perfect for warming up on a cold day.
Ingredients
- 1 large onion, chopped
- 2 tablespoons butter
- 10 cups water
- 6 cups chopped cabbage
- 4 cups diced peeled potatoes
- 1 large carrot, peeled, halved and sliced
- 3 tablespoons chicken bouillon granules
- 1/2 teaspoon coarsely ground pepper
- 1/2 teaspoon dried minced garlic
- 4 cups cubed fully cooked ham
Directions
- In a large saucepan or Dutch oven, saute onion in butter until tender, 5-7 minutes. Add the water, cabbage, potatoes, carrot, bouillon, pepper and garlic. Bring to a boil. Reduce heat; cover and simmer until potatoes are tender, 20-25 minutes. Stir in ham; heat through.
