Roast Beef Sliders

Total Time Prep: 20 min. Bake: 25 min.
Yield 1 dozen
These roast beef sliders on Hawaiian rolls combine tender roast beef with melty cheese, prepared horseradish and sauteed onions. Topping the sweet rolls with everything seasoning really takes the dish to the next level.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 3 tablespoons mayonnaise
  • 2 tablespoons prepared horseradish
  • 1 package (12 ounces) Hawaiian sweet rolls
  • 1 pound shredded cooked roast beef
  • 6 slices cheddar or mozzarella cheese
  • 3 tablespoons butter, melted
  • 1 tablespoon everything seasoning blend

Directions

  1. Preheat oven to 350°. In a large skillet, heat oil over medium heat. Add onion; cook and stir until tender, 5-7 minutes.
  2. In a small bowl, combine mayonnaise and horseradish.
  3. Without separating rolls, cut the rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking dish. Spread horseradish mixture over bottom. Top with roast beef, cooked onion and cheese; replace top halves of rolls.
  4. Brush rolls with melted butter; sprinkle with seasoning.
  5. Cover with foil; bake until cheese is melted, 20-22 minutes. Remove foil; bake until tops are golden brown, about 5-7 minutes.

I love to cook big Sunday dinners for my family when time allows, and almost better than the dinner is finding new and tasty ways to re-purpose the leftovers. This recipe is a great way to use up leftover roast beef. For an even more savory flavor (if that's possible!), use a smoked variety of cheese. —Shannon Dobos, Calgary, Alberta
