  • Boneless pork loin roast: For this recipe, you’ll need 2 pounds of boneless pork loin roast. Pork loin is also referred to as pork roast and center-cut roast.
  • Olive oil: Use extra virgin olive oil, if possible. Compared to regular olive oil, it’s cold-pressed and unrefined.
  • Apples: The recommended apple variety, which is sold at most farm stands, grocery stores and farmers markets, is Golden Delicious. This apple variety creates very little juice when it’s cooked, making it a good fit for this recipe.
  • Onions: The best onions for cooking at high heat are yellow onions. They caramelize well and become sweeter.
  • Garlic: Fresh garlic cloves that have been peeled, but not chopped or minced, add a nice garlic flavor to this pork roast and apples.

Directions

Step 1: Sear the pork

Preheat the oven to 350°F. Sprinkle the roast with salt and pepper. In a large nonstick skillet, heat oil over medium heat; brown the roast on all sides.

Step 2: Roast the pork

Transfer the pork to a roasting pan coated with cooking spray. Place the apples, onions and garlic around the roast and sprinkle it with rosemary. Roast the pork until a thermometer inserted in the pork reads 145°, 45 to 55 minutes, turning the apples, onion and garlic once. Remove the pork from the oven; tent with foil. Let the pork stand for 10 minutes before slicing. Serve the pork with the apple mixture.
