Tiramisu Cookies

Tiramisu is a wonderful dessert, and these tiramisu cookies spin the classic flavors in a completely different direction. And unlike regular tiramisu, they're portable: You can drop a few in your bag for treats on the go.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 2 teaspoons rum extract
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 to 2 teaspoons instant espresso powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • FILLING:
  • 1 carton (8 ounces) mascarpone cheese
  • 1/4 cup butter, softened
  • 1 tablespoon Kahlua (coffee liqueur) or 1 teaspoon instant espresso powder (dissolved in 1 tablespoon hot water)
  • 3 cups confectioners' sugar
  • Dash salt
  • Baking cocoa or Dutch-processed cocoa

Directions

  1. Preheat oven to 350°. Cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and extracts. In another bowl, whisk flour, espresso powder, baking powder and salt; gradually beat into creamed mixture.
  2. Drop dough by tablespoonfuls 2 in. apart onto parchment-lined baking sheets; flatten slightly with bottom of a glass dipped in sugar. Bake until edges begin to brown slightly, 12-14 minutes. Remove from pans to wire racks; cool completely.
  3. For filling, in a large bowl, beat mascarpone cheese and butter until smooth; add Kahlua (or espresso). Gradually beat in confectioners' sugar and salt until smooth. Pipe or spread filling on bottoms of half cookies; cover with remaining cookies. Dust cookies with cocoa. Store in refrigerator.
