Whatever reason, your eggs ended up staying on the counter way longer than you intended. So the question is, how long can eggs sit out of the fridge, and is it still safe to use them?\r\n<h2>Can you leave eggs out of the fridge?<\/h2>\r\nUnfortunately, eggs left out on the counter for too long need to be tossed. This is because eggs are susceptible to <a href=\"https:\/\/www.tasteofhome.com\/article\/salmonella\/\">salmonella<\/a> contamination from the way they\u2019re processed.\r\n\r\nEggs can be contaminated with salmonella before they leave the farm. Due to this risk, the <a href=\"https:\/\/www.fda.gov\/food\/eggs-guidance-documents-regulatory-information\/egg-safety-final-rule\" target=\"_blank\" rel=\"noopener\">U.S. Food and Drug Administration<\/a> requires egg farmers to thoroughly wash, dry, sanitize and refrigerate eggs before they\u2019re shipped off.\r\n\r\nWhile this process removes any potential salmonella from the shell, it also slightly thins it and removes some of its natural protection. So, the eggs are almost immediately refrigerated to prevent any new bacteria introduction, as salmonella flourishes in temperatures between 40-140\u00b0F.\r\n\r\nSalmonella is also the reason why <a href=\"https:\/\/www.tasteofhome.com\/article\/is-it-safe-to-eat-raw-eggs\/\">you shouldn't eat raw eggs<\/a>.\r\n<h3>Why don't Europeans refrigerate eggs?<\/h3>\r\nFood safety experts take a slightly different approach to their <a href=\"https:\/\/www.tasteofhome.com\/article\/reason-why-americans-refrigerate-eggs-europeans-dont\/\">egg safety in Europe<\/a>: they require that <a href=\"https:\/\/www.tasteofhome.com\/article\/how-to-wash-fresh-eggs\/\">eggs remain unwashed<\/a>, which keeps the shell thicker and prevents the bacteria that causes salmonella from making its way into the egg.\r\n\r\nSimilarly, farm fresh eggs need to be <a href=\"https:\/\/www.tasteofhome.com\/article\/how-to-wash-fresh-eggs\/\">washed properly<\/a>\u00a0before eating.\r\n<h2>How long can eggs sit out of the fridge at room temperature?<\/h2>\r\nAccording to the <a href=\"https:\/\/www.fsis.usda.gov\/food-safety\/safe-food-handling-and-preparation\/eggs\/shell-eggs-farm-table#19\" target=\"_blank\" rel=\"noopener\">US Department of Agriculture (USDA)<\/a>, refrigerated eggs should be left out for no more than two hours. Ideally, though, we'd recommend not taking them out until you're ready to use them. Or, 30 minutes before you plan to bake with them, since it is important to <a href=\"https:\/\/www.tasteofhome.com\/article\/bake-with-room-temperature-eggs\/\">bake with room temperature eggs<\/a>.\r\n<h2>Why You Should Refrigerate Your Eggs<\/h2>\r\nOnce the eggs have been refrigerated, letting them sit unrefrigerated is a big no-no. Transferring eggs from your fridge to the kitchen counter can cause condensation to form on the eggshell.\r\n\r\nWater and warm temperatures are a breeding ground for salmonella, meaning the condensation water on the eggshell exposes the egg to contamination. Even if the room-temperature eggs don\u2019t have condensation on them, bacteria can still contaminate them through the thinned shell.\r\n<h2>The Best Way to Store Eggs<\/h2>\r\nKeep your eggs on one of the refrigerator\u2019s shelves\u2014not the door as it's one of the warmest parts of the fridge. When kept in a refrigerator at 40\u00b0 or lower, <a href=\"https:\/\/www.tasteofhome.com\/article\/how-long-can-eggs-last-in-the-fridge\/\">eggs can last<\/a> up to five weeks. After those five weeks, air will have seeped through the shell and start to break down the yolk and white.
