Be sure to scrape the sides of the bowl so everything is incorporated.\r\n\r\nAdd eggs, vanilla and lemon juice, blending with mixer on low speed for 30 seconds, then medium speed for about 2 minutes, or until light and fluffy, scraping down bowl.\r\n\r\nYou may be tempted to skip the 1\/4 teaspoon of lemon juice\u2014but don't! Remove from oven and cool on baking sheet for about 1 hour.\r\n\r\nWe cheated and tried to test a cookie before the hour timer went off just to see what would happen. The cookies are so delicate when they first come out of the oven, it fell apart in our hands.
