It's perfectly spiced and made with real tortilla chips, so this meal is sure to satisfy all your soup cravings.\r\nHow to Make The Cheesecake Factory's Tortilla Soup<\/h2>\r\nIf you can't get to the restaurant, enjoy Chicken Tortilla Soup<\/a> from the comfort of home. This recipe serves six.\r\nIngredients<\/h3>\r\n\r\n \t1\/4 cup canola oil<\/li>\r\n \t2 tablespoons butter<\/li>\r\n \t1 cup yellow onion, diced<\/li>\r\n \t1\/2 cup green bell pepper, diced<\/li>\r\n \t1-1\/2 teaspoons fresh garlic, minced<\/li>\r\n \t3 thick corn tortillas, 6\" taco size<\/li>\r\n \t1-1\/2 teaspoons chile powder<\/li>\r\n \t1-1\/2 teaspoons cumin<\/li>\r\n \t1 teaspoon coarse salt<\/li>\r\n \t3\/8 teaspoon ground black pepper<\/li>\r\n \tPinch cayenne pepper<\/li>\r\n \t1\/4 cup all purpose flour<\/li>\r\n \t1\/2 cup thick tortilla chips, crushed into 1\/8\" crumbs (can be done in food processor)<\/li>\r\n \t3-1\/2 quarts chicken broth<\/li>\r\n \t1 cup canned diced tomatoes<\/li>\r\n \t4-1\/2 teaspoons tomato paste<\/li>\r\n<\/ul>\r\nDirections<\/h3>\r\nStep 1: Prep the soup base<\/h4>\r\nHeat the oil and butter in a large saucepot set over medium-high heat. Add the onions, peppers and minced garlic into the pot and cook until they begin to lightly caramelize.\r\nStep 2: Prep the tortillas<\/h4>\r\nFinely chop the corn tortillas into 1\/8\" pieces, add into the pot and cook until golden brown.\r\nStep 3: Season the soup<\/h4>\r\nAdd the chile powder, cumin, salt, pepper and cayenne pepper into the pot and cook until the spices become aromatic.\r\nStep 4: Simmer the soup<\/h4>\r\nAdd the flour into the pot and cook for 4\u20135 minutes. Then, add the chicken broth, canned diced tomatoes and tomato paste to the pot and bring to a boil. Lower to a simmer and cook until the tortillas are tender (10\u201315 minutes). Reduce to 2-1\/2 quarts.\r\nStep 5: Blend the soup and serve<\/h4>\r\nBlend the soup until smooth using an immersion blender or blend in batches with regular blender.\r\n\r\nServe in bowls topped with crispy tortilla strips.
