I also rolled the cookies into balls and then rolled them through sugar just before baking. Word to the wise, these spread more than I thought they would, but they are not pancake like or even crispy for that matter. They have a nice crunch on the outer edge and then a surprisingly chewy,soft center. These cookies may be simple and plain, they are not drenched in name brand chocolate or praised by a famous television chef, but can stand by themselves for just having good flavor.They also seem to have a warm hospitable, curl up with a book & milk type feeling to them.
