One of my favorites - I make it for most holidays and work potlucks where I want a really easy and quick, but delicious, egg dish. A few notes- sometimes I drain a can of rotel instead of using the chiles - you have to really drain them - use a colander and push some of the liquid out of the tomatoes or the dish will be soupy. I usually make the night before - I find that it takes longer than 40 minutes to bake, likely because it is cold. Lastly, I have used low fat cottage cheese and sometimes 1\/2 the shredded cheese is low fat and it works fine. But don\u2019t skip the butter!
