I squeezed my shredded zucchini dry by placing it on a clean cotton tea towel and wringing it over the kitchen sink. I do this for all of my recipes containing this wonderful veg. Third time I have made this recipe. Daughter and husband really like them. I always \"sweat\" zucchini when using it in a recipe like this----salt it to let the water drain off and then I take a handful and squeeze out all the water I can. Sometimes I use a tea towel but the hands also work fine. I found the basil too strong so I use Italian seasoning. Also used onion powder instead of grated onion. First batch I made the butter burned the patties so since then I use canola oil in my non-stick pan and come out fine. Thank you! Really good! I cannot have enough good zucchini recipes. Needed slight adjustments. Per comments I began with just 1 egg - you can always add a 2nd if needed. Even with just 1 egg, forming into patties isn't very effective! I used a 1\/4 C measure per patty and dropped the batter in the hot butter. I went with someone's suggestion and added garlic powder.
