A classic icebox cake looks like it was made by gravity-defying magic. With inside cake layers standing vertically like zebra stripes, it\u2019s a wondrous sight to behold in a slice. But no one needs to know how easy the cake was to assemble, or how this no-bake summer dessert<\/a> doesn\u2019t require a single heating element.<\/p>\n Indeed, all this icebox cake needs is whipped cream, premade chocolate wafers and a few hours in the fridge. Get ready to cut into it and accept all the \u201coohs\u201d and \u201cahhs\u201d over this fascinating, delicious dessert.<\/p>\n In a large bowl, use a hand mixer or stand mixer to beat the heavy whipping cream until soft peaks form. Add the sugar and vanilla, and beat until stiff peaks form.<\/p>\n Editor\u2019s Tip:<\/em> Take a look at our visual guide on the difference between soft peaks and stiff peaks<\/a> if you\u2019re unsure about the stage of your whipped cream. The guide is for egg whites, but whipped cream soft and stiff peaks take the same shape.<\/p>\n Spread heaping teaspoons of the whipped cream on the cookies.<\/p>\n Make six stacks of cookies. Turn the stacks on their edge, and place on a serving platter, forming a 14-inch-long cake.<\/p>\n Frost the top and sides of the cookies with the remaining whipped cream. Take out a 9×5-inch loaf pan, and line it with storage wrap so there\u2019s a good amount of overhang. Layer 1\/2 inch or more of the whipped cream on the bottom.<\/p>\n Assemble the cookies as directed, configuring the amount of cookies or cutting some out to fit the new pan measurement. Turn the cookies on their edge, and line the stacks of cookies in the pan. Avoid pushing the cookies down through the whipped cream to the bottom of the pan. Pour the rest of the whipped cream around and on top of the cookies, and cover with storage wrap. The lovely thin chocolate wafers are made by Nabisco. They can be difficult to find, but are worth the search. As others have mentioned, look on the top shelves in the cooky aisle. They are called \"Famous Chocolate Wafers.\" It is a long yellow box, you can see the wafers through the cellophane overwrap. They run about $5.00 a box. Layer the wafers in small stacks for ease of preparation and then put stacks together in a long log, cookies all running in the same direction. If your cookies are broken, just put them back together on the stack, you will never know they were broken. If you have a box where they are really broken, then just make your pudding by layering the broken pieces with the whipped cream in a bowl. It will be just as delicious. If making this for company, try hard to find a box with the most cookies intact, as the presentation is just as beautiful as the taste. Use whole bean vanilla if you have it. It makes the flavor even better. Also, try using superfine (Baker's) sugar in the cream. It dissolves instantly and gives the cream a cleaner taste. Chocolate curls are nice, but to keep the pure and lovely flavor of the cake, crush a few of those broken pieces into crumbs and sprinkle on top for garnish.
