I used diced cooked Bryan brand Beef Sausage instead of bacon because we don\u2019t eat pork. Before adding the cooked potatoes, I added just about a teaspoon of extra vegetable oil to my cast iron skillet to make sure and get the sides coated so it wouldn\u2019t stick. Also, I used half whipping cream and half 1% milk (half cup total). This recipe exceed my expectations.
