This is the BEST soup recipe! Fabulous flavors! I can see why this recipe is a blue ribbon winner. I've made it twice and made some adjustments the second time. I substituted boneless chicken thighs and cooked them right in the broth, just prior to adding the kale and tomatoes. The chicken was much more flavorful and moist doing it that way. Because I don't eat kale, I substituted fresh baby spinach; and I omitted the anchovies. My brother ate 3 bowls!
