I followed the recipe as written and made a special trip to the store to buy Goya Adobo seasoning. This was utterly ruined by the seasoning. I have never eaten anything to salty in my life! I cooked this for my wife tonight. I did have some tweaks as I didn\u2019t have adobo seasoning and I wasn\u2019t going to go out and buy that. After chopping the red onion and red pepper, used a mixture of black pepper, ground cumin, sweet paprika, onion powder and garlic powder, then I sprinkled a generous pinch of flake salt. <\/p>

I cooked the vegetables covered for 10 minutes. Definitely needed a bigger skillet (mine is 12\u201d). Then I mixed in the chopped pineapple and mango, along with a fresh squeezed 1\/2 lime (this made sense with it being Caribbean).<\/p>

Turned out fantastic as the lime sweetened the vegetables to be more in balance with the fruit.
