Here's the key to making these turn out right: Thoroughly chill the dough. One hour isn't long enough. Keep the remaining dough in the fridge while you roll out what you can work with. Absolutely do not roll any thinner than 1\/4\". Bake on parchment paper lined baking sheet. Bake only about 12-13 minutes and make sure to test your oven temperature with a good quality oven thermometer.
