Very, very tasty!! One pan is such a treat as no cleanup. The only change I made in the vegetables was to cut zucchini in chunks as I had no cauliflower. Did not have lemon pepper so zested a lemon and mixed in freshly ground pepper. I mixed all the vegetables with the oil and seasonings in a large bowl and after I put this on the sheet pan, I took the chicken thighs and dipped them in the extra oil in the bowl then added the seasonings on top.
