We are not Vegan, but I was interested to try a Cashew sauce. The recipe was a tasty winner, but is NOT a weeknight meal. I prepped all ingredients and seasonings the day before. When it came time to make the actual dish, it came together in about 30 minutes but that was because I had done chopping and measuring the day before. I used a food processor to make the sauce which adds extra dishes to clean. We used Birds Eye Frozen Asparagus since the store was out of fresh and tasted fine. Made as-is, although I added Garlic and Vegetable base to dish for extra flavor.
