My Mom used to make this for the family when she wanted to reward us for a job well-done. It was some of the best fudge ever.... I am thinking of making this my Christmas present this year. I know 2-3-5,okay a Lot of people that will devour it before they even tell their family that it is in the house.
@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2023-11-27
@context":"http://schema.org/","@type":"Person
DonnaDeRossette

This is by far the best fudge recipe! Every Christmas I have to make this for my family. The one year I didn't make it, they were so disappointed I made it for New Years as a surprise.

1) Toast your nuts first. Spread the whole nuts out on parchment paper in a single layer. Bake for 5–10 minutes until they darken and you smell their aroma. Watch the nuts closely because they can burn easily. Lift the parchment paper, with all the toasted nuts, off the baking sheet to cool. You can do this early and store the nuts in an airtight container until ready to use.

2) Put the jar of marshmallow cream in the microwave for about 7-10 seconds and spray your spatula with Pam so the marshmallow doesn't stick to it. Of all of the ways I have tried to remove the marshmallow from the jars, this technique works the best for me.

3) I use a mixer to combine the hot sugar mixture with the nuts & marshmallow cream rather than doing it by hand. I made the mistake of trying to stir it by hand and found out I wasn't strong enough to mix it completely and then needed my husband to pour it into the pan for me!

It is DELICIOUS!!! Although I did mess it up at first and didn't follow EXACT directions, but it's GOOD that I didn't. I live in Southern California, and I am not sure if the warm weather effects the density of the fudge? But I just used 3 Hershey bars, and didn't read right the ounce size of the bars...and the recipe turned out awesome! When I used the ounces called for in the recipe with the 2 large bars, and 1 regular sized bar...the fudge comes out waaayyy to soft and sticky. When I use just 3 REGULAR sized Hershey bars - it comes out with perfect texture to cut and package. Also I used Ghirardelli Milk chocolate chips instead of semi-sweet chocolate chips, and blended almonds in the blender...and it is milkalicious!
