Enjoyed this recipe and will make again. I trust Taste Recipes Contest Winners. I made two tweaks to the recipe:\u00a0<\/p>

* Substituted 1 cup of Pearled Barley...something I already had...at 1\/3 the cost of farro, a specialty grain. I did not change the cooking time and worked out fine. <\/p>

* Sauteed the beef in batches and then followed by saut\u00e9ing the veggies in a cast iron skillet for better browning. Then added to the pressure-cooker. Cast iron skillet browns better than a stainless steel pressure cooker.<\/p>

I started with 3 lbs of boneless chuck, and trimmed of grizzle to net about 2-2 1\/4 lbs of cubed beef.<\/p>

This is a beef stew and heartier than a barley soup. Will try the farro version another day.<\/p>
