These were okay but not great. One-quarter inch is too thick for both the pie crust and the almond paste. I rolled out the almond paste as thin as I could get it without tearing. That seemed about right. I made then made three batches. For the first, I rolled the pie crust to a bit thinner than it\u2019s original. That worked, but there wasn\u2019t enough resistance biting into the cooked pastry. For the second batch, I didn\u2019t roll the crust out at all. That one had better mouth feel. For the last batch, I kneaded the scraps together and rolled them out to a bit thicker than the original thickness.
