This is delicious! It does take a long time to make. There are 2 ways that will save time: [1] use premade spaghetti sauce [my fav is Emeril's Kicked Up Tomato]; [2] I will also try the suggestion to brush with eggplant with olive oil and bake @ 275F for 10 mins on each side. When making the sauce I didn't think there would be enough, but there was plenty. This dish is super filling, and I don't think it is that great leftover, so I reduced the recipe to a loaf pan size for 2 of us. I made this because I suddenly remember how much I liked eggplant parmiggiano when I used to live in NYC and my bf never tried it and we had some leftover ground beef and eggplant in the fridge.
