The concept looked interesting, and I made this for dinner tonight, following the recipe quite closely with the exception of using fresh whole mushrooms that I quartered. I used Tillamook mozzarella, Daisy sour cream, a sweet onion, brown whole mushrooms, and I grated my own parmesan cheese from a wedge. While I enjoyed the dish, I was not blow away. One of the best features was that the corn flakes gave it a very nice crunchy topping. I found the flavor of the base very similar to French onion chip dip. This would make an excellent pot luck dish or something for large gatherings. Definitely would have to cut this recipe in half since it's just the hubs and myself. We never have that much leftover chicken to utilize for another recipe, so I would cut up a couple of B.S. Chicken breasts, put my seasonings on the pieces and toss the chicken to coat, cover and let sit in the fridge for at least an hour to season through, brown the chicken first and then add it into the recipe. This is what I do with, pretty much, every recipe that calls for chicken, pre-season and brown. Chicken is a bland meat and needs serious help. Brining works well to add flavor. Anywho, I will be saving this to try in the near future.
