This is a perfect springtime cookie. I can see these being served at wedding\/baby showers. These are delicious!! I used the juice of one lime, and zest of one lime, to use all of the lime, came to about 2 1\/2 T lime juice, one whole teaspoon of zest, couldn't stop eating! Next time will try adding several drops of essential lime oil as well, as I really like a definite lime flavor. I'd used lemon zest as I didn't have lime zest. I added 2 tsp. cornstarch to dry ingredients and more than 1\/2 cup graham cracker crumbs. Baked 9 to 10 minutes.
