Even par-cooked acorn squash. Delicious! But the cheese amount at the end is way off! Two cups is 8 ounces of shredded cheese. Obviously the photo doesn't have 2 cups, and if you covered the zucchini with that much cheese you'd drown it. Better just a little Parmesan and mozzarella, or whatever white cheese you've got. You can alternately sprinkle with a Parmesan\/panko\/chopped parsley breadcrumb mix, broil it a couple minutes--then you've got crunch on top for a nice texture contrast.","reviewRating":{"@context":"http:\/\/schema.org\/","@type":"Rating","ratingValue":4,"worstRating":1,"bestRating":5}},{"@context":"http:\/\/schema.org\/","@type":"Review","datePublished":"2016-07-18","author":{"@context":"http:\/\/schema.org\/","@type":"Person","name":"CyanScissors"},"reviewBody":"This was a delicious meal. I don't like green bell peppers, so I used red. For the bread crumbs, I used chunk of a locally baked loaf of Parmesan, Basil and Oregano bread. Be careful not to pack the filling in too tightly, or it won't cook properly. I ate one immediately after cooking them, absolutely delicious. The rest I put on a baking sheet and into the freezer. You do not need to cook the meat prior to baking this dish if you cook the dish for the recommended amount of time. If you are trying to trim the fat you can use very lean ground beef, egg whites or egg substitute and fat free or at least part-skim mozzarella cheese. I also used whole wheat bread crumbs to add some extra fiber. I made all these modifications and it still turned out a winner. It is very flavorful! My husband really enjoyed this dish. Even par-cooked acorn squash. Delicious!\nBut the cheese amount at the end is way off! Two cups is 8 ounces of shredded cheese. Obviously the photo doesn't have 2 cups, and if you covered the zucchini with that much cheese you'd drown it.\nBetter just a little Parmesan and mozzarella, or whatever white cheese you've got. You can alternately sprinkle with a Parmesan\/panko\/chopped parsley breadcrumb mix, broil it a couple minutes--then you've got crunch on top for a nice texture contrast.","CommentId":3,"DateRated":"11\/15\/2018 18:33","GUID":"a8a8385dcb0a48a7aabc64936621f5eb","MemberId":1707733,"Rating":4,"ScreenName":"Donald","SubmittedDate":"11\/15\/2018 18:33"},{"Comment":"The recipes calls for 4 to 5 zucchini, and I considered halving the recipe, but I also had 2 cubanelle peppers, and I thought the filling would work well in those too. When they were solid, I vacuum-sealed them in single portions.","CommentId":4,"DateRated":"10\/06\/2018 20:56","GUID":"98DFE1080CD13590B56D8DAE24384C90","MemberId":92779,"Rating":5,"ScreenName":"JMartinelli13","SubmittedDate":"10\/06\/2018 20:56"},{"Comment":"

I made this recipe tonight with homegrown zucchini from the garden and homegrown jalapenos as well. Plus this recipe still comes out if you decrease it to half or only make 1\/4 of the recipes especially if you are only cooking for two people.<\/p>","CommentId":22,"DateRated":"07\/24\/2013 19:55","GUID":"d0a6303c19174711af7ae1f2f41ed166","MemberId":4484886,"Rating":5,"ScreenName":"danielleylee","SubmittedDate":"07\/24\/2013 19:55"},{"Comment":"","CommentId":23,"DateRated":"07\/24\/2013 18:35","GUID":"d2c811ed0f4f45e9836bf1c3345de180","MemberId":1767513,"Rating":0,"ScreenName":"Etoile","SubmittedDate":"07\/24\/2013 18:35"},{"Comment":"
