This pie has a good flavor but the consistency is not that of a good pie. This is a fancy peach dessert with peaches coated in a white liquid and it should not be named a pie. When I try it again I will not use the egg white on the pie crust as it made it too crunchy and more like a pastry than a pie crust. Then I would mix the sugars and butter in with the peaches and arrange it all in the pie plate, topping it with a mixture of brown sugar and cinnamon, butter cut in and then add some chopped pecans. The flour that they say to add to the peaches gives it a doughy sort of presence when you try to cut it. In my oven the baking time needed to be increased as after 45 minutes the peaches were not cooked enough.
