Bring to boiling and maintain for 10 min, cool and put in freezer containers and freeze. She recycled\/repurposed the larger plastic cottage cheese containers and filled to an inch from top. We use ziplock quart bags with 2 cups corn, pressed flat and freeze. She would do 50 plus containers, she figured 1 container a week for a year, with extra incase extra feet were under the table. She canned this way too. We raised chickens and would put 60 in freezer, ducks were one a month. Everyone that tries freezing corn this way says it is the best. We grow more sweet corn that we can use so we are giving it away in feed bags full. People come back year after year for corn to freeze using this recipe. One suggestion---I cut my corn off of the cob outside, that way there is no mess in the house. Use the picnic table, a TV tray or whatever to save splatters in the house.My husband just loves corn this way. Simple for us we set up the large cooker outside (propane) bring the Lg Kettle to a boil, cook 12 ears at a time for 3 min, pull up steamer basket and dump corn into a cooler of Ice Water when it's cooled goes on a cookie sheet. Work on the Picnic table. I have a chunk of wood with a nail press the base of the cob into it for sturdyness place in lg bowl and start cutting the corn off! When it gets to full dump to another when all done 2 cups to a Food Saver bag freeze for a bit for the juice then seal!!! Hose off the Picnic Table & etc. All done!! Very Easy to do when you have young children. I have used the recipe for years and given the recipe to more people than I can count. Everyone that tries freezing corn this way says it is the best. We grow more sweet corn that we can use so we are giving it away in feed bags full. People come back year after year for corn to freeze using this recipe.
