Very nice recipe and really easy to put together. While I often cringe at too many modifications to the original, I will share the small changes I made to match our eating habits and taste. <\/p>

First, I used whole wheat, low carb tortillas for taste and to take some of the sting out for a diabetic meal. I used 1 lb of 90\/10 hamburger combined with 1 lb of taco flavored ground turkey sausage. It gave it a little extra kick and dropped the fat content down a bit. <\/p>

One warning, Do Not give in to the temptation to use canned enchilada sauce. I did the first time I made it and regretted it after I followed the recipe this time using the packaged enchilada mix. Way better. <\/p>
