This was incredibly refreshing, a truly delightful side. I'll be making this many times over the summer. I didn't measure all the veggies, just chopped and added the bell peppers, etc, to clean out the fridge. I wanted to use up green onions so I subbed them for the red onion, and added celery for crunch. Not a fan of avocado so I skipped that, added some black beans I had in the fridge. With the orange-lime dressing, everything tastes delicious.
