This is a delicious Gingersnap cookie recipe. I baked some cookies and froze most of the dough balls, rolled in sugar, for later use. I also added a small amount of grated crystalized Ginger to the dough. Baking them for 9 MINUTES gave me the chewy cookie I was wanting. NOTE: For the chocolate drizzle decoration I used Ghirardelli Dark chocolate flavored melting wafers that I melted in the microwave. (NO shortening needed for these wafers which are available in dark and white chocolate at Walmart.) Once melted I simply used a small spoon to drizzle the chocolate over the cookie. Weeks later I thawed the frozen balls on a cookie sheet and then baked 9 minutes. I got 47 cookies using my cookie scoop. I will definitely keep this recipe and make these cookies again.
