This was great as written! I've also mixed it up by using vegetables I've had on hand. Broccoli florets, even some sliced baby carrots, some cauliflower, and I've used all different kinds of peppers. This is a great recipe to use up whatever vegetables you have on hand. I've made a salad, used only some of the vegetables, and then made this with the rest of them the next night.
