I also added another TBSP of raw turbinado sugar, as well as 1 TBSP vital wheat gluten! Wonderful bread with a great chewy texture and crisp crust. I baked my loaves on a pizza stone at 450 F to add to the crust, but I don't think this is necessary as they have such a great flavor.
