Leftovers are why we make soup in the first place! Divvy up any extra lima bean soup into sealed, airtight containers, then place some in the refrigerator and some in the freezer. Cooked soup can stay fresh in the fridge for three to five days, while frozen soup will be good for two to three months.

Lima Bean Soup Tips

Laura Scherb for Taste Recipes

How can I reheat lima bean soup?

Let your soup thaw overnight or for a few hours in the refrigerator before reheating it in a saucepan over medium heat. If it’s looking a little too thick, you can add more broth or a bit of cream. Just don’t let the cream reach a boiling point while you’re reheating the soup.

Are lima beans and butter beans the same thing?

Indeed they are. Identifiable by their greenish color and double bean shape, limas and butter beans are one and the same.

Are lima beans good for you?

This is a big yes! They are known to help lower cholesterol, aid with weight loss and improve digestion, thanks to all the protein and fiber these beans pack.

How do I make lima bean soup less bland?

You can easily add more oomph to this recipe for lima bean soup. If the dried herbs don’t do it for you in the flavor department, try adding fresh herbs like dill, rosemary or thyme. You could even give it a Cajun kick with some Creole seasoning.

How do I make my soup creamier?

Try adding a little creme fraiche, Dijon mustard or a combination of the two.

Saw this recipe many years ago when it was first submitted to Taste Recipes by the Cape May, NJ native. I'm a South Jersey native and didn't know that there was a Lima Bean festival in Cape May. I finally got around to making the soup about 3 weeks ago after seeing the recipe again on TOH website. I made it to take to a party my friend had to watch the NFC Championship game. It's a very flavorful soup that had the right amount of richness with the chicken broth combined with the half and half cream. The seasonings, the vegetables, lima beans, and the bacon round out a unique, delicious soup that was well received by the guests at the party.

@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2021-03-26
@context":"http://schema.org/","@type":"Person
OrangeMagnet
My husband is a lima bean freak! This recipe is fantastic. I did tweak it a bit. I'm a frugal shopper and found dry limas 1/2 off. Could not resist bargain. Doubled recipe, used dry limas, more potatoes. Good 1st day, phenomenal after 2nd day, thickened and softened quite a bit. Didn't really need cream but that was the crowning glory. Red peppers added wonderful flavor. Thick, creamy, wonderful.
@context":"http://schema.org/","@type":"Rating
{"@context":"http://schema.org/","@type":"Review
2014-01-10
@context":"http://schema.org/","@type":"Person
B.R.A.T...Pak5
I made this for my kids because some love lima beans and one does not. I did do a little tweaking because of what I had on hand. I used a bag of dried baby lima beans for the first time ever....I most usually buy frozen lima beans (fork hook or baby limas), as I do not like canned. I did cook the dried baby lima beans for a while before adding the other ingredients to soften them up first. And I did not have any sweet red peppers on hand but I had a seasoning jar of dried chopped sweet red and green peppers so I added some of that. It turned out great! Very thick and flavorful. Next time I'll make it with frozen limas and fresh sweet red peppers. And as others have commented on the difference of lima beans....the dried baby limas that I used tasted more like butter beans in my personal opinion. Lima beans have a different taste I think and are supposed to be green. That may not be correct, just commenting on what I was brought up on.
