I also think sausage is a great substitute for ground beef. \n\nThe use of ground beef in baked beans must be a regional thing. I live in SE Pennsylvania (in the \"Amish Country\") and never heard of it. The only meats I've ever seen in baked beans are bacon (I always use a lot of it) and ham.\n\nMy special \"Party Beans\" for a crowd use one can of every type of canned beans that I can find on the shelves of the grocery store. All but the \"pork and beans\" are thoroughly rinsed and drained. I don't add any canned baked beans.\n\nFor the sauce, I use canned tomato soup, tomato paste, ketchup and\/or tomato sauce. (Of course, I cook from scratch and never measure anything or make it the same every time.) If I have it, I add some orange juice. \n\nI use brown sugar, mustard, salt and pepper. Lots of bacon and onions, too, and sometimes diced green peppers. The sausage would be an excellent addition and comes in many flavors. \n\nI bake my beans at 350\u00b0F for about an hour, until the sauce has thickened and the flavors are well-mixed. As they bake, I stir them well several times, but only during the first 40-45 minutes. Allow them to bake for the last 15-20 minutes without stirring them so that they have a thin, tasty \"crust\" on the top. \n\nI have a large electric roaster with a removable pan that I use to mix and bake the beans. I can then plug the roaster in to keep them warm for hours. It was a huge hit for me and my husband. I tried to get spicy sausage but Walmart pickup substituted mild sausage (rats!) so I took someone else\\'s suggestion from the reviews to add red pepper flakes. I don\\'t think I added enough as it was not spicy. I also used a crock pot instead of baking, since I love my crock-pot liners which keep things tidy.
