I made this for the first time today. It was really easy and so good! So much easier than my traditional toffee recipe. I sprinkled the melted chips with hazelnuts for an extra crunch. I've been making this for over 25 years. using brown or golden sugar. I rarely use nuts due to some family and friends allergies, but occasionally use slightly chopped pepitas. I also do a quicker version baking crackers with butter and brown sugar for only 5 minutes. Then turn off oven, sprinkle with 1 - 2 cups chocolate chips, return to (turned off) oven for about 1 minute, then spread melted chips over top. Not a toffee this way but certainly an easy and delicious square. I have even gone a step further and made \"eyes in the night.\" For these, after the chocolate chips are spread I run the top edge (non sharp edge) of a knife between crackers to see individual cracker edges, then on each cracker place 2 white melting wafers and a chocolate chip on top of each melting wafer. Being careful not to tip pan at all, return to turned off oven for one additional minute to melt the \"eyes\". Cool until all chocolate is completely set.
